💡Today’s Tip: Double the veggies in your recipe
Here’s why: Even if you are eating veggies everyday you are probably not getting enough. Veggies really should be the star of our meal.They contain carbs, vitamins, minerals, fiber, antioxidants, phytochemicals…basically all the good stuff our body needs to work well on a daily basis. Ideally, you want to get in 5 or more servings each day. A great place to start is by having a veggie at every single meal (as much as possible). However, I feel that most recipes leave room for upgrades in the veggie department.
Here’s How: My favorite upgrade to make sure I’m getting at least 5 servings in a day is to just double the amount of veggies a recipe calls for. This means if it calls for 1/2 an onion I might use a whole. If it calls for 1/4 cup of chopped red pepper I may just through the whole thing in there. Only 3 stalks of celery needed? Nah, let’s make it a whole bundle! Making this simple swap helps me get up to 9 servings somedays. FYI, It may change cooking time a bit (but not usually), and you may want to increase the amount of spices you use (to taste).
